One of my favorite things about Lynchburg is that it’s home to so many great local shops and restaurants. One of my favorites is Millie’s Living Café. If you’re in the mood for a healthy, vegan lunch, and a DELICIOUS juice, then Millie’s is your place. Their tacos made with jackfruit are to die for, and I could eat the walnut “meat” lettuce wraps all day long. And don’t even get me started on the blue acai bowl.. MMM. Now that I have all of my health food friends drooling, here’s a way you can make some of those yummy walnut lettuce wraps I mentioned in your own home! I also tried some cauliflower taco “meat” (next time I will bake it for a bit before blending. The texture was a little off when I simply sautéed it for a few minutes.) While you’re out this summer enjoying all that your city has to offer, stop in a few local places and tell them how much you love them!
GF and Vegan Walnut Taco “Meat”
- 2 cups raw walnuts
- 2 teaspoons GF soy sauce
- 2 teaspoons olive oil
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 3 teaspoons chili powder
- A pinch of cayenne
- Salt to taste
- Wash your walnuts and let them soak for at least 2 hours. This really helps them to soak in all of the flavors later and get that great copycat “meat” texture.
- Combine all ingredients in your blender (food processors work, too)
- Blend until you’ve reached a roughly ground texture.
- Add any toppings and enjoy!!
We loved this new spin on Taco Night. We even enjoyed it with some crockpot queso. 😉
