Homemade Lara Bars

 

As you have probably been able to tell, I love making batch items of goodies that will last us all week. I also looove finding easy ways to make some of your favorite store bought products from home! One of my favorites is this homemade Lara Bar recipe. I first tried Lara Bars during one of my many attempts at completing a Whole 30 challenge. If you’ve ever done Whole 30 or like to eat generally healthy, you’d agree with me that there is one HUGE must in being successful: planning well. Like I hinted in my last post, in the next few weeks you’ll hear how we meal plan and prep, and why we love it. I think an essential to any kind of successful health food plan or diet is being able to have at least a few grab and go things when you don’t have the time to cook that day. Lara Bars were my go-to during Whole 30 (I mean, the Apple Pie flavor? I’m drooling just thinking about it). So you can imagine how much I jumped for joy when I saw a way to make it myself and save some cash! And it only takes about 5 minutes!

This recipe is probably the easiest one I’ll ever have to post, and I love that! You can choose so many different flavors by using different variations of nuts, fruits, or add ins. This one is a more indulgent flavor, with some coconut and dark chocolate. MMM. I’ve also made a more healthy, just as yummy, version with dates, almonds, and cinnamon. Seriously, get creative – so many things could work for these! Just pack them individually in baggies and refrigerate them to keep their firmness, and you’ve got another on-the-go breakfast.

You’ll need:

  • 2 cups pistachio and almond blend
  • 2 cups dried cranberries
  • ¼ cup coconut
  • Handful of dark chocolate chips
  • 3 teaspoons cinnamon

 

  1. Combine all ingredient in blender and blend until it starts to look a little clumpy.
  2. Pour mixture on parchment paper and roll out in rectangle. Cut into square or desired shape, and refrigerate.
